In the Spanish jazz doc "Calle 54", there's an interview segment with Tito Puente at his club on City Island. He is showing a mural of Latin jazz greats and expounding on them. Prominent in the visual, but conspicuously absent from Tito's spiel, is Desi Arnez.

I have had carpel tunnel ops in both hands and do not appreciate kneading and lots of clapping at gigs. The Blind Boys of Alabama did me in for Twenty Four hours.

you will like the no-knead recipes then, Brian.

2 cups warm water
1 Tbsp milk
2 tsp yeast

mix until yeast is not clumpy

add
2 cups flour
1 tsp salt
2 Tbsp olive oil

Mix until a sticky gooey mess. Transfer to a floured smooth surface. Fold it over and over and over on itself for about a minute or two. Put in a lightly oiled bowl and cover with a tea towel. In about an hour or so, punch down the dough, fold it over and re-cover with the towel. In another hour, roll that sucker out and cover it with all manner of yummy and bake at 475°F until the cheese is bubbly and beginning to brown.

Not to brag, but during the colder months we get *free* home delivery of brick-oven-baked naturally leavened whole-grain bread. It's the best bread ever, but they don't sell dough. In fact, the bread pail is waiting on the porch right now ...
