Last week I mentioned I'd heard Lacy/Rudd's quartet at McCabe's. Get a load of the acts who have played there: https://www.mccabes.com/archive/ It's a guitar, etc., store, with folding chairs and a tiny stage, an ideal venue. About as anti-brutalist as you can get.

I just made it up, but here's how I did it.

Brown pot roast on both sides. Put a few slices of onion and a whole celery stalk in. Put chopped garlic, salt and pepper on one side of roast. Flip over, repeat. Pour beer and chicken stock to BARELY cover. Add a dash of Worchestershire sauce. Cook for 1 hour, flipping once. Remove veggies if you want. Put in lots of potatoes, onion slices, carrots, whatever. Really pack 'em in. Bring to boil. Let go another 1 - 1.5 hours, flipping once. Add liguid if necessary. When tender, remove everything. Let roast stand and slice. Cook down the sauce a little. Thicken if you want to (I didn't). Taste and correct seasonsing. Put everything back in until warmed. Then eat.

Oh, put the post roast and liquid on high heat the beginning. and reduce to low heat when it simmers. This is a stovetop recipe. You could start it on the stove and finish it in the oven.
