I’m sure I can get daikon but IDK about the little salted shrimp or kelp broth or myulchiaekjeot (fish sauce). Hope so. Can’t really get to an H Mart without a lot of hassle.

	3:47pm ChukAmok: @Ike I should have been more specific in that I do take some liberties with this recipe. I do not use any of the shrimp (I don't eat meat/fish, and there's already more than enough salt used in making kimchi), but will use vegan fish sauce if I can find it or soy sauce if I (likely) can't. As I am in Upstate South Carolina so I use regular bosc pears and add carrot as well as the daikon because traditional ingredients are difficult to track down here.
	3:52pm Ike: Noted, thanks. I’m a flexitarian so I’ll look for the salted shrimp and fish sauce, but if I can’t find it, NBD, can do vegan version. Bosc pears sound fantastic — I presume you use slightly unripe ones, or no?

I do not use any of the shrimp (I don't eat meat/fish, and there's already more than enough salt used in making kimchi), but will use vegan fish sauce if I can find it or soy sauce if I (likely) can't. As I am in Upstate South Carolina so I use regular bosc pears and add carrot as well as the daikon because traditional ingredients are difficult to track down here.
