	6:20pm DJ Peter: ↳ adamdoesit @6:16 The Instant Pot is great for lentils and the like -- speeds things up considerably. My wife bought an Instant Pot but never used it until I got her a couple cookbooks: we really like "Milk Street: Fast and Slow," we've probably made 1/3 of the recipes in there

My spitball Instant Pot adjustment principle is to do the same thing I'd do on stovetop, first on saute then with lid shut, but reduce water by 1/3 to 1/2. At some point soon, I think I'm going to get myself a little stovetop Hawkins pressure cooker. The IP is a little much for when I want some legumes as a side on short notice.

	6:32pm adamdoesit: ↳ Kat in the chat @6:25 The cool(ing) thing with a small stovetop cooker is that you can pop it in the sink and run water over it to bring the pressure down, instead of waiting for the IP's "natural release." (Usually, if I don't care about inducing a boil, I throw a folded dish towel over the IP's vent and open it up. PSSSSHTTTTtttt-ahhh.)

	8:16pm DJ Peter: I really like Lossing's playing, and accompanying. My only complaint is I wish he went by Russell. "Russell Lossing" is easy to say. "Russ Lossing" is easy to say wrong.

My spitball Instant Pot adjustment principle is to do the same thing I'd do on stovetop, first on saute then with lid shut, but reduce water by 1/3 to 1/2. At some point soon, I think I'm going to get myself a little stovetop Hawkins pressure cooker. The IP is a little much for when I want some legumes as a side on short notice.
