Believe it or not, my local bakery STOPPED making "loaf style" carrot cake and now only has the fancy frosted 3 layer kind. They sell other loaf cakes by the slice, including very good fruitcake, but my cries for a carrot cake comeback have fallen on deaf ears. Once in a blue moon they'll do carrot cake muffins but not qute the same.

OTOH I am all for the recent trend of "cupcakification" of certain Italian deli cookies/baked goods. Place near me makes little tricolor cupcakes topped with an actual tricolor cookie; cannoli cupcakes topped with a proper mini cannoli, etc. They also do a very cool Nutella cupcake which comes with a very tiny actual plastic jar full of Nutella embedded in the chocolate frosting. Then there's the issue of iterative, fractal pastries -- such as a giant cannoli stuffed with cannolis (actually exists, known out here as a "cannoli bazooka), tricolor cakes covered in tricolor cookies, and so on.

I remember being on the Coney Island Boardwalk during a rainstorm and no one else was there. I was down at the end and it was a summer or spring day. Eventually, I ran into a lifeguard but I was amazed (and loved it)
