	8:09pm Wendy del Formaggio: ↳ djnogoodnick @8:01 It is really good! I do not grind the rice. I'm too [electric] lazy [susan]. Unless it's brown rice, it tends to cook down a bunch anyway. The ratio I use is 7c. of liquid (or more) per 1c. rice. Today's liquid is 1qt homemade soup stock + 1qt shiitake liquor from when I reconstituted dried shiitakes for something else + 2c. water with some BTB chicken paste. I also added cooked chicken, red onion, carrots, celery, bell peppers, wood ear mushrooms, hijiki, wakame, garlic, ginger, and about 1tsp salt. Bring to a boil, reduce to simmer, stir every 15 mins or so until it's the texture you want. It's THAT easy.
	8:12pm Wendy del Formaggio: Oh, and when it's done, dress each bowl with a little toasted sesame oil and toasted sesame seeds and either ume plum vinegar or tamari / soy sauce. You can also drop some sriracha or sambal oelek into the bowl if you want it spicy. Congee is supposed to be bland, but I don't want bland.

Boneless, and I trimmed and pounded it down; rolled with a mix of fresh rosemary, parsley, a shit ton of garlic, a can of anchovies, and a bit of dried marjoram and pepper. Then tied it and put garlic shards in slits in fat cap. Worth the effort and $$ I hope! Sides are delecita squash to be roasted in rings while lamb rests, hipster expensive arugula, and sourdough Pullman from same hipster place where I got the meat.

	8:09pm Wendy del Formaggio: ↳ djnogoodnick @8:01 It is really good! I do not grind the rice. I'm too [electric] lazy [susan]. Unless it's brown rice, it tends to cook down a bunch anyway. The ratio I use is 7c. of liquid (or more) per 1c. rice. Today's liquid is 1qt homemade soup stock + 1qt shiitake liquor from when I reconstituted dried shiitakes for something else + 2c. water with some BTB chicken paste. I also added cooked chicken, red onion, carrots, celery, bell peppers, wood ear mushrooms, hijiki, wakame, garlic, ginger, and about 1tsp salt. Bring to a boil, reduce to simmer, stir every 15 mins or so until it's the texture you want. It's THAT easy.
	8:12pm Wendy del Formaggio: Oh, and when it's done, dress each bowl with a little toasted sesame oil and toasted sesame seeds and either ume plum vinegar or tamari / soy sauce. You can also drop some sriracha or sambal oelek into the bowl if you want it spicy. Congee is supposed to be bland, but I don't want bland.

Boneless, and I trimmed and pounded it down; rolled with a mix of fresh rosemary, parsley, a shit ton of garlic, a can of anchovies, and a bit of dried marjoram and pepper. Then tied it and put garlic shards in slits in fat cap. Worth the effort and $$ I hope! Sides are delecita squash to be roasted in rings while lamb rests, hipster expensive arugula, and sourdough Pullman from same hipster place where I got the meat.
