@fred: we just bottled out first cask (Jack Daniels bourbon barrel) of 5-year rum (the distillery is just 6 years old.) Smooth as a nun's bum. Better than we had hoped, being as yet hopeless amateurs but unstoppable experimenters.

@ngh: it is illegal in Canada, as well. I work with a small batch craft distiller here in Nova Scotia. Wood fired still, runs of 30 litres at a time. Hand-crafted, you know?
