I mainly use it for making Dutch Babies...but sometimes I'll use some to fry a ham steak (for example). It will cook as hot as oil without burning like unclarified butter.
Avatar Swag For Life Member 11:34am
melinda:

I simmer the butter until the solids sink to the bottom and do the cheesecloth thing. The first method I used involved gradually skimming the solids off the top and was stupidly tedious. That's what i get for following the first youtube how-to video I found. I don't do a whole pound at a time but I use it in place of whole butter.

I'll have to watch to see if all the water's boiled out by the time the solids drop. If you overcook it till the solids caramelize, it's ghee.

When I was the quasi-music writer for a kids' magazine in '87, I first heard the Elvis/Memphis album when RCA did all those reissues (for the 10th anniversary of his death). It's too bad that later material of his, like this, isn't better known. As for "Midnight Shift," this is a nice counter to Holly's wholesome image. How'd this get released?

"Zippo Marks" is a new one -- wrong first AND last names. Also, the whistling at the very end is by Harpo. This song was performed in "Horse Feathers" by all four of the Marx Brothers, individually. (Harpo also played it on the harp.) Groucho's very cynical rendition is my favorite.
