One day I walk into a bio shop thing, and the shop owner said "naaah, making seitan is a pain in the neck, you should buy those (pretty expensive) ones instead…" I was all "damn ! I'm sure it's cheaper to make some by myself…" (in my head)

pierre: not sure what you can get in Europe but here you can buy a box of Vital Wheat Gluten as CP says and then basically just mix it with water. Then you boil it in a broth for a while.

@pierre: seitan is an Asian term for wheat gluten, which is what's left if you soak all or wash all the soluble starch/carb out of some wheat flour or similar. it's protein, and nutritionally pretty similar to tofu, which is the protein part of soy. it's used in many cuisines where meat is not used, because it gives you concentrated protein to eat. many Asian "mock" meat" dishes use seitan/gluten...

in the US, the federal government has made tons and tons of rules/regulations over the course of the 20th century about food (or licensing for who is allowed to do it) that carry legal force. often the rules reflect mainstream food assumptions of many decades ago, or were intended to protect the "standard" way things were being done in a particular food industry, under the guise of protecting people from "bad" food.

so we have to be careful about advocating a food-prep method in public that might get us or someone else in trouble. -- i know the EC has tons of food regs too now, pierre -- you should check up on those, so you know what you're ignoring if you feel like it :-)

pierre 10:58 is correct. :-) There are tons of laws/regs, and they are not enforced consistently, because the backlash would be incredible if they were.

My grandfather was an executive-branch federal administrative law judge, appointed under Truman. I actually kinda do know how federal regs are made, function, and enforced, and what the overall history and development of that area of law is. :-)
